I hosted dinner for my in-laws and made some delicious healthy choices and wanted to share with you! It’s scary to host people over and to have to cook for them considering there are what feels like an army of little people running around me and not really letting me ‘devote’ my time to prepare what I would consider a classy, super tasty dinner! But as a mom, we just have to pull it off one way or another! I will show you here what I made for appetizers, dinner, and deserts! Hubby cleaned the living room and dining room off of toys while I was cooking, because YES, you’ve gotta delegate 😉
Appetizers
Fresh Veggies & Hummus
Fresh veggies and hummus make tasty, crunchy, juicy and healthy appetizer. Take very little time and preparation and the left overs can be packed for your snack for the next day! Here I have bell pepper, cucumber and baby carrots!
Whole Grain Spinach Quesadilla
I had spinach quesadilla at our local Mexican restaurant and LOVED IT! So wanted to make healthier and tastier version of it! It was delicious and it was gone in moments as I served it warm off the pan! Here is the recipe!
Dinner
Arugula & Fetta Salad
Simple but very tasty salad, and a great compliment to the rest of the meal! Here is the recipe!
Beef Milanesa
Beef Milanesa is HUGE in my house! If hubby is doing the grocery shopping, feel mila will always be in the cart! It’s not often that I make milanesa’s because of the breading, but the kids and hubby love it and I eat about 1 maybe 2 and call it a day!
Steamed Veggies
In order to keep the dinner light (my appetizer had the heavy lifting), I steamed some bean – green beans and sweat peas, added spices and served it! Super easy and healthy for everyone! Together with the milansa, makes great left overs for work the next day!
Desert
Fruit Salad
Fruit Salad is a brilliant idea that you can DRESS UP in many different ways! The truth is, I had some fruit that needed to be eaten right away! I added more fruit to that to make sure I have enough servings for everyone and VOILA! Desert is done! Serve the fruit salad over a top of small chocolate ice-cream ball (or whatever ice cream you have in the freezer) and top the fruit with whipped cream! My guests love it and the kids loved it!! Perfect all around, simple and easy!
