Have you craved a healthy spin on your eggs? I had some Easter Eggs left overs so my healthy egg salad was up on the menu for a few days! I make it fresh daily because I add avocado and it makes for this beautiful explosion of creaminess with a kick of crunch! It’s delicious and perfect for those that are on a healthy kick.
Ingredients:
- 4 hard cooked eggs – chopped
- 1 ripe avocado – chopped
- 1/2 cup diced celery (about 3 medium stalks)
- 1/4 cup plain Greek yogurt
- 1 teaspoon dijon mustard
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tablespoon chopped fresh dill (or dried)
Directions:
- Add all ingredients and mix well. Keep salad refrigerated. Best consumed in 24 hours.

I love Butter Lettuce, it melts in the mouth and it makes great wrap for the egg salad. Pictured above I have boiled plain quinoa (carb) and chopped fresh tomatoes (veggies, half green container, the other half is the butter lettuce). This is my lunch and it was amazingly delicious and healthy. Here is how it looked after measurement:
