In my effort to always have on hand healthy foods that my entire family will eat (especially hubs), I came up with this fritata idea. This egg based dish is super versatile while it is also very simple and easy to make. I put about 2 cups of spinach and no one complains! I make it weekly for hubs snack on the go, the kids can eat it at any point of day, and I tend to grab two slices when I am running on the go in the morning.
Fritatas look like quiche but they are great because they don’t have the crust required for the quiche! Which makes it super simple to make in minutes.
Makes 10 servings
Prep time – 10 min
Cook time – 20 min
Ingredients:
- 6 eggs
- 1/2 cup unsweetened almond milk (or regular milk if you like)
- 2 cups chopped spinach (or any cooked or fresh veggies)
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Directions:
- Preheat oven to 350 degrees.
- Beat eggs in large mixing ball. Add the rest of the ingredients and mix well.
- Oil spray a round, oven safe pie dish, pour egg mixture in and bake for 20-25 min or until fork is inserted and comes out clean.
You can experiment with the veggies and add anything and everything you like including chopped turkey or chicken meat, even cooked salmon! I mean it when I say, you can add anything! Here is another fritata I made and added pepper crusted turkey deli meat.
