We love road trips! We pack the kids and the car, strollers, sippy cups, food and drinks!!! Take us a while to get out of the house but the excitement of the journey keeps us going! I love packing foods that we can pass back to our kids and munch in the car. That way we keep it healthy too! Here are the top 8 easy, healthy, delicious foods I pack for road trips:
- Boiled eggs – the kids loved them, low in calorie, super easy to prepare and take on the go! And so filling!
- Fruit – Cut up apples, bananas, grapes. Any fruit that I have in the house. Sometimes the kids have to see me eat it and right away ….. they want some!
- Nuts – are our all time favorite! No need to prep and the kids go ‘nuts’ for them!
- Veggies – cut up bell pepper, baby carrots, cherry tomatoes, baby cucumbers, cauliflower! When I ask, normally everyone says they don’t want any …. Until I start munching on them and you see all these hands wanting … especially daddy loves cherry tomatoes! They are like candy!
- Dried Fruit – our favorite is banana chips!!! The kids love them! Rasins, cranberrys, appricots are some of our favorite! Sometimes we get the mixed dry fruit with coconut and pine apple! YUM! Something different and easy to pass back in the car!
- Roasted Chickpeas – super easy to make, you can spice them up, pop them in the oven and they come out so flavorful and crunchy! The kids love crunchy!
- Peanut Butter and Jelly Sandwiches – whole-grain bread (or Ezekiel 4:9), an all-natural nut butter, and all-natural fruit spread like St. Dalfour and you will have the kids singling and smiling!
- Homemade Energy Balls – these are so easy to make and taste like real treats! They are also very filling. Here is the recipe!
