If you are looking for something sweet, moist, and decadent, but still straying on the healthy side of things, you must try this coconut everything brownie! I have such big sweet tooth while pregnant and this brownie really hit the spot! Hubby and kids approved, but you may not want to share!!
Ingredients:
1/3 cup Coconut Oil
2 medium ripe bananas, sliced
1 cup dark chocolate morsels
3 eggs
1/2 cup honey (or agave)
1/4 cup carton coconut milk (refrigerated)
1 tsp vanilla extract
1/2 tsp salt
3/4 cup coconut flower
Directions:
1. Preheat over to 375F. Melt coconut oil in a medium pan. Add sliced bananas and heat for several minutes. Mash banana with a fork. Stir in chocolate ships and heat until melted.
2. Pour mixture into a medium size bowl and add eggs, honey, coconut milk, vanilla, salt and coconut flour. Stir in all until all the ingredients have fully blended.
3. Oil spray a 9×9 inch baking dish, pour into dish and bake for 25 min or until toothpick inserted in center comes out clean.
