“This is the BEST chicken you have every made!” … my husband exclaims as he tries a bite of this juice, super flavored, decadent chicken Caprese! Yes, I am not known for my excellent chicken cooking skills, Lord knows I try, BUT …. I think I hit the Jack Pot with this scrumptious recipe! We are huge lovers of Caprese salad so it is not a surprise combining the wonderful salad with freshly cooked chicken breast will turn out amazing!

makes: 4 Servings
Ingredients:
4 medium chicken breast
2 tbs olive oil
1/4 cup white wine
Juice of 1 large lemon
Seasoning: salt, pepper, Mexican all seasoning, cumin
6-8 oz mozzarella cheese
1.5 cups cherry tomatoes, halved
1/4 cup basil, minced
Directions:
1. Warm up oven on 375 degrees.
2. In a large pan, warm up olive oil.
3. Pad chicken breast with seasoning (per taste), place in hot pan and sear 4 minutes on each side on medium high heat. Add wine and lemon juice half way though. Cover with lid for an additional 3 min.
4. Remove from stove, place chicken breast on cookie sheet, cut 4 strips half way thought chicken, place mozzarella cheese in the strips, place cherry tomatoes on top, sprinkle basil. Sprinkle olive oil on top (optional). Add all the juices from the pan on top of chicken and place in oven for 20 min.
5. Cool chicken and serve with green salad!
