I whipped up a jambalaya with kielbasa sausage and quinoa I had in the fridge! It wasn’t a planned meal! I just looked at what I had in the fridge and used my imagination. All the spices made it resemble jambalaya. This recipe is healthy and family friendly. It was fast and delicious and the entire family enjoyed it! Sometimes we just have to make things happen in the spur of the moment, don’t we!
Ingredients:
1 lbs kielbasa or any sausage you have one hand – chopped
2 cups already cooked quinoa – per the directions of the bag
1 medium white onion – chopped
1 tbsp olive oil
1 cup fresh tomatoes – or canned
1 cup broccholi – chopped
1 – red bell pepper
Green onions and parmesan cheese – garnish (optional)
Spices: crushed red pepper; oregano; salt and pepper; Badia – complete seasoning (mexican section of your super market). Use seasoning per taste.
Directions:
On mediam-high heat, in a large sauce pan, warm up the olive oil, add the onion and cook till soft (2 min); add the kielbasa; and veggies and cook till all are soft. Add quinoa and spices and cook for 2-4 min. Take off heat and garnish.
This dish last well in the fridge and makes great left overs for next day work lunch!
