I am READY FOR THE WEEK!! That’s what you want to tell yourself when it comes to your meals! But so often, we are on a hurry to feed the kids, we prep something quick, a lot of time pizza …. we tell ourselves … “This is just for the kids, I will make a salad for myself!!” And then you find yourself eating the kids leftover pizza and reaching out for another piece …. Yep! That’s totally me …when I don’t meal prep!
Meal prep just means that ‘you took the time’ to ‘think’ about your food for the week, you went grocery shopping … maybe with a list of things … and then you arranged your fridge so that you can see all the healthy foods you got or ever get so far as to actually whip a few things that will help keep you healthy for the week.
This is a stretch for me! Believe me! I am a mother of four and this past weekend we were taking short road trips each day. On Sunday evening, on our way back home from our day trip, I was dropped off at the store, my hubby kept the kids in the car and allotted me 10 min to grocery shop at Sam’s club! I am happy to report that I got it done in 20. We came back home and I had HELP unloading the car! And that’s the extent to the help I got that evening! I put all the groceries away, fed the kids, cleaned the kitchen (kind of), bathed and put the kids to sleep …. and around 9 pm … I started chopping and prepping and cooking! SO IT IS A HUGE DEAL FOR ME TO KEEP IT SIMPLE! By 10:30 pm I was done and I even cleaned my kitchen (kind of!!)
So if you are a busy mommy that just can’t muster to make the time for this stuff that apparently seems so important to keep you healthy and eating well, AND STAY ON TRACK, then keep reading, I am including a lot of pics!
WHAT’S FOR LUNCH?
First thing I think about is my lunches for the week so that my main meal is taken care of! This week I put together a simple but very colorful salad and added rotisserie chicken as the protein!I added veggies and fruits that can last in the fridge and only chopped up the bell pepper, which preserves really well in the fridge chopped! I added spinach, blueberries, bell pepper, cherry tomatoes, walnuts, crazins! Nice and colorful, right?! I didn’t add dressing so this salad can preserve well for up to a week in the fridge!
Then I chopped up the rotisserie chicken and each day I add a piece of chicken to my already prepped salad for the day and VOILA! I am done with my lunch! Can’t go simpler than this and NO COOKING required here! Nice, right?!
Breakfast
My husband was bothered by the fact that I bought 8 dozen organic eggs from the store! He thought it was an exorbitant amount of eggs. Well I wanted to make these egg muffin cups for breakfast (I used 9 eggs, almost 1 dozen just here)! Then I boiled 12 to have as a snack because it is super simple and easy and the kids love them. Then I make scrambled eggs and cheese for breakfast for my 4 kids…. even the baby eats eggs now … need I say more! WE NEED THE EGGS! And most importantly, ‘have you not learned not to question me by now, hubby? ;)’ Back to the egg muffins …. you can add anything and everything as far as veggies or proteins and they preserve so well in the fridge. SNACK
I love snacking on things through the day! In fact, I am more of a grazer really and it’s because I am constantly hungry, as part of my emotional defense mechanism! This week I have chopped bell pepper and cucumber with hummus, as well as: cherry tomatoes, hard boiled eggs and tons of fresh fruit! I am excited!

I’ve gotta make something sweet for the week and I pick to make these super simple coconut macaroons that taste divine! Here is the recipe
And this is my day to day meal planning for the week! Dinners include fresh proteins like fish and chicken and I cook these in the evening with a vegetable on the side. This week we only plan to dine at home 3 nights and the rest we have events or outings. But I am definitely ready for the week!
