I am always looking to have healthy food ready to eat especially now that I will be back to losing baby weight and in need of a modestly strict diet than what I have been eating through out my pregnancy! And it is not easy to stay motivated while 9 month pregnant with my 4th …. in fact …. all I want to do is put my legs up and watch TV!! But somehow I mustard the strength to spend about an hour prepping for the 4 day week and I AM SO HAPPY I DID! Now I can really kick back on the couch with great food that will not put me back weight wise!
How about a one pan roasted wild salmon, seasoned with your favorite herbs, salt, pepper, a splash of lemon juice, and a splash of white wine! Add your favorite veggies, 375 degrees, 20 min and Voila!
Just look at this beautiful 3 grain stove made casserole! Quinoa, Basmati Rise, Bulgur cooked in chicken broth, seasoned with salt, pepper and your favorite herbs! Add to finely chopped, sautéed veggies you have sitting in the fridge (and in need of being consumed)!!!! Mix well and add 1 cup almond milk! Sprinkle parmesan cheese! This turned out truly amazing and it is a HUGE batch that will last you over the week!
Then comes the truly easy part! Chopped salad, just ready to be mixed with your favorite additions and served! Whole fruit! Buy it a little hard and let it ripe on your kitchen counter! And how about a juicy, decadent, delightful piece of water mellon?! I have pre cut and sitting in the fridge, the whole family can just pull it out and enjoy!
My fridge is also stocked with chicken and pork, preseason and packaged, ready for me to throw on the stove top of in the oven and make a fresh dinner!
