My husband LOVES quesadillas so I wanted to bring to the house a healthier version of quesadilla that we can all eat as a family!
The healthier part about this spectacular dish is that I am using whole grain tortillas (not homemade yet, but it’s on the plan to make them at home) and the spinach was freshly sauteed!
Ingredients:
Makes 4 – serves 8
Total Time – 20 min
2 bags of raw spinach
1 tbsp olive oil
1 mediam onion – minced
1 tsp fresh garlic – minced
1/2 tsp garlic salt
4 whole grain tortillas
1 cup shredded cheddar cheese
Cooking Oil Spray
Directions:
- In a large pan warm olive oil on medium heat, add onions and garlic and sauté for 3-4 minutes until soft. Add spinach and stir continuously while spinach is wilting. Don’t overcook the spinach, just a few minutes until it no longer looks raw, add the garlic salt.
- In a separate large pan, spray with cooking oil spray and add the whole grain tortilla, one at a time, one side at a time. Cook for 1 min on each side until gold brown color and a little crunch, flip and do the same on the other side, make sure to spray the pan again before flipping. Now add sprinkles of cheese and then 2 tbsp spinach mix that you already cooked. Add some more sprinkles of cheese and fold the tortilla, continue to cook for 2 more minutes.
Serve these as appetizers or add them to your salad! Makes a great dish and the whole family will enjoy it!
