This is my husbands favorite pasta sauce. Every time we go to an Italian restaurant, he praises how amazing this sauce is and he always gets a bowl of tomato cream pasta on the side of his meal! So I wanted to surprise him with this meal! I used fresh ingredients and plain greek yogurt instead of cream to make this recipe perfect for my family!
Ingredients for sauce:
- 2 lbs of fresh tomatoes (any kind) – chopped; You can use 2 cans of tomatoes if you don’t have fresh
- 1 lb mushrooms – chopped
- 1 median white onion – chopped
- 2 tbs olive oil
- 1 cube chicken bullion
- 1/4 cup white wine (whatever you have on hand)
- salt and pepper to taste
- 1 tsp oregano
- 1/3 cup plain greek yogurt, I had fat free on hand
- 1/4 cup shredded parmesan cheese
- parsley for garnish (optional)
Directions:
1. Heat the olive oil in a large sauce pan, then add onions and sauté for 2-3 min.
2. Add mushrooms, tomatoes, bullion, wine, salt, pepper and oregano and sauté for 8 min on medium heat, or until veggies are are fully cooked.
3. Turn heat down to low and stir in the yogurt and cheese.
4. You can add already cooked: whole grain pasta or quinoa.
5. Garnish with parsley (optional)
