If you are like me, you see a picture of ‘something’ and you get the mouthwatering taste of the dish just looking it at! I call it, eating with my eyes!!! This is EXACTLY what happened when I saw a picture of the 7 layer bar!! I knew it’s going to be a finger licking deliciousness and my brain started racing with how to make this fit my clean eating style! I only keep clean eating ingredients in my house and I am the self proclaimed queen of ‘throwing what I have in my fridge together for an appetizing dish” ……. so here is my version of the 7 layer bar – Sweet Potato Dark Chocolate Coconut Seven Layers Bar!

Ingredients:
- 1/3 cup coconut oil (melted)
- 1 cup graham cracker crumbs
- 1 cup dark chocolate chips
- 1 cup chopped pecans
- 1/3 cup dried cranberries
- 1/2 cup shredded coconut flakes, plus extra to top
- 1/2 cup coconut milk
- 1/3 cup sweet potato (mashed)
- 1/2 teaspoon cinnamon
Directions:
- Preheat oven to 325. Melt coconut oil in a round 9″ silicone pan (or 8×8 glass baking pan). Use microwave to melt the oil.
- Add the graham cracker crumbs to the oil and press to form a crust in the pan.
- Add dark chocolate chips over the graham cracker crumbs.
- Add pecans, dried cranberries, and coconut flakes over the dark chocolate chips.
- In a bowl, whisk the coconut milk, sweet potato mash, and cinnamon. Pour the mixture in on the layers.
- Sprinkle extra coconut flakes over the top of the milk mixture, and bake for 30 minutes or until milk mixture is caramelized.
- The bar needs to call for a couple of ours for the mixture to set.Serve and enjoy!
EXPERIMENT – if you don’t have these ingredients in your pantry and fridge, don’t fret, remember, you can always through things together to taste exactly how you want it!
Substitutions:
coconut oil – butter (I don’t use butter)
dark chocolate – any other chocolate chip will do (I only buy dark)
pecans – walnuts
dried cranberry – other flavor chocolate chips, fresh fruit like berries, or raisins
coconut milk – conduced milk; if you use other milk like almond, use less of it
sweet potato – pumpkin puree
