I was looking for something new and healthy for desert! I wanted no time in the kitchen but still something that can satisfy even my picky kids! I have been hearing so much about the Chia seed as being so healthy and nutritious so this Chia Pudding Parfait was no brainer!
The Chia seed is so amazingly transformational! I was blown away by the texture and taste! Full of fiber and healthy omega-3 fats, chia seeds transform into a creamy pudding that’s perfect for verities of meals: breakfast, midday snack or even desert! The versatility comes in all the great fruits that can accompany the pudding! I added bright orange slices as I had them handy, but slices of apples, bananas, strawberries or raspberries would make for perfect topping too! The little bits of whole grain crackers add a lovely crunchy texture. Put together this parfait in the evening, pop it in the refrigerator overnight, and enjoy a healthy, flavorful treat in the morning.

Yield: 4 servings, ½ cup each
Ingredients:
2 cups unsweetened almond milk
2 tsp. honey
½ cup chia seeds
2 whole grain graham crackers
2 cups chopped orange slices (or any other fruit you have on hand)
Preparation:
1. Add almond milk, honey, and chia seeds in a bowl; stir well.
2. Cover & refrigerate bowl for least 4 hours; best to leave it overnight, mixing after 2 hours.
3. Before serving, layer chia seed mixture with graham cracker and fruit in parfait glasses.
