Perfect for the winter soup and very easy to make! Fresh veggies, split peas, or lentils – anything goes!
Ingredients:
1 medium onion – diced
1 bag split peas – rinsed
2 cups of chopped carrots
2 cups green beans
1 large potato – pealed and chopped
1 can of Hunts tomatoes
4 cubes of chicken bullion
2 tbs olive oil
1 tsp oregano
salt and peper to taste
Directions:
1. Sautee onion in lard soup pot with olive oil for 2-3 min.
2. Add peas, carrots, beans, potato, tomatoes, chicken bullion, oregano, salt and pepper and 6 cups of water;
3. Simmer on low heat for 40 min – adding water as necessary.
