Hubby and I had a weekend get away to FL where we celebrated the wedding of two wonderful friends! We had an awesome time, with much indulging in foods and sweets and awesome beach time! Now that we are back, I am fully focused on getting back to my nutritious meals! And although exhaustion from the busy weekend traveling is setting in …. I refuse to give up đ
I whip a few things I love making …. just needing something quick and easy so that I can be ready for the week!
I started by making this awesome Red Split Peas dish, tasted like Dal! Have you had Dal? It’s an amazing Indian dish! I totally made up the recipe and my husband said it was AMAZING:
Next I whipped up the egg muffins that you hear me rave about every single week!! They are really good and so easy to make and eat!
Then I roast an eggplant and a spaghetti squash while sautĂ©ing salmon for the week! Very similar menu to last week, but no matter, I love eating the same thing and doesn’t this food looks so amazing?
Why does meal planning and prepping work to keep you in track with your goals?
Because it creates the right habits that you can ingrain in your system so that you continue to eat healthy no matter what is happening in your life! When I first started meal planning, it took me a lot longer than I thought, but the more I kept doing it every weekend, the more it became a fun habit I had! It became a family habit as well where we all know that the weekend is when mommy goes grocery shopping and then we come home and mommy cooks! So on the days I can’t go grocery shopping, hubby goes for me and he will even hit more than one stores for me to get me everything I need on my list! Sometimes it take a village, but when you have the determination and commitment to your HEALTH and the HEALTH of your family, it feels a normal part of life that you establish and keep working on every weekend!

What I love about our groups because they are real! We are all mommies, some of us a working full time, some of us are studding for tests and school and all of us are full time mommies! And remember that most of the time its hard to see your goals in fruition but it is easy to envision all you want to achieve when it is demonstrated by someone else! Then it becomes real, because when one mama can do it, it really means that we can all do it! And it is a process.
